Ingredients

  • 1 cup creamy peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups oats
  • 1/2 cup sunflower seeds
  • 1/2 cup chopped dried apricots
  • 1/2 cup raisins
  • 1/2 cup chopped almonds

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine peanut butter, honey, vanilla extract, and salt. Stir until well combined.
  3. Add oats, sunflower seeds, dried apricots, raisins, and almonds to the bowl. Stir until all ingredients are well combined.
  4. Line a 9x13 inch baking pan with parchment paper. Transfer the trail mix mixture to the baking pan and spread it evenly.
  5. Bake in preheated oven for 20 minutes, or until lightly golden brown.
  6. Remove from oven and let cool completely before cutting into bars.
