Preheat the oven to 350 degrees. Grease a baking sheet and set aside.
Clean the mushrooms and remove the stems. Set aside.
In a small saucepan, melt the butter over medium heat. Add the garlic, bread crumbs, parsley, salt and pepper. Stir until well combined.
In a medium bowl, combine the sausage, onion, bell pepper and cheese. Add the bread crumb mixture and mix until combined.
Fill each mushroom cap with the stuffing mixture. Place the mushrooms on the baking sheet and bake for 30 minutes, or until the mushrooms are tender and the filling is golden brown.
Serve warm.
