Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1 cup apricot preserves
  • 1/4 cup soy sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • Sliced green onions, for garnish

Directions

  1. In a bowl, combine apricot preserves, soy sauce, Dijon mustard, apple cider vinegar, minced garlic, grated ginger, red pepper flakes, salt, and pepper. Mix well to combine.
  2. Place chicken thighs in a large zip-top bag and pour the apricot marinade over them. Seal the bag and massage the marinade into the chicken. Place the bag in the refrigerator and let the chicken marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat. Remove the chicken thighs from the marinade, allowing any excess marinade to drip off. Reserve the marinade for basting.
