Ingredients

  • 1 (9-inch) unbaked pastry shell
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1 (8-ounce) package mushrooms, sliced
  • 3 eggs, lightly beaten
  • 1 1/2 cups half-and-half
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup grated Cheddar cheese

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Melt the butter in a large skillet over medium heat. Add the onion, spinach, and mushrooms; cook and stir until tender, about 10 minutes. Drain any excess liquid.
  3. In a medium bowl, whisk together the eggs, half-and-half, salt, and pepper. Stir in the spinach mixture and cheese.
  4. Pour the egg mixture into the pastry shell. Place the quiche on a baking sheet.
  5. Bake in the preheated oven for 40 to 45 minutes, or until a knife inserted into the center comes out clean.
  6. Let the quiche cool for 10 minutes before serving.
