1 (10-ounce) package frozen chopped spinach, thawed and drained
1 (8-ounce) package mushrooms, sliced
3 eggs, lightly beaten
1 1/2 cups half-and-half
1/2 teaspoon salt

Directions
Preheat the oven to 375 degrees F (190 degrees C).
Melt the butter in a large skillet over medium heat. Add the onion, spinach, and mushrooms; cook and stir until tender, about 10 minutes. Drain any excess liquid.
In a medium bowl, whisk together the eggs, half-and-half, salt, and pepper. Stir in the spinach mixture and cheese.
Pour the egg mixture into the pastry shell. Place the quiche on a baking sheet.
Bake in the preheated oven for 40 to 45 minutes, or until a knife inserted into the center comes out clean.
Let the quiche cool for 10 minutes before serving.
