Ingredients

  • 1 3-4 lb. Prime rib roast
  • 1 cup rock salt
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly ground black pepper

Directions

  1. Preheat oven to 350°F (175°C).
  2. Place the prime rib roast in a roasting pan.
  3. In a small bowl, combine the rock salt, olive oil, garlic, and black pepper. Mix until well combined.
  4. Rub the mixture all over the prime rib roast.
  5. Place the roast in the oven and roast for 45 minutes.
  6. Raise the oven temperature to 425°F (220°C) and continue to roast for an additional 15 minutes, or until the internal temperature of the roast reaches 140°F (60°C).
