Ingredients

  • 1 (12-14 pound) turkey
  • 2 quarts water
  • 1 cup kosher salt
  • 1/2 cup brown sugar
  • 2 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 2 tablespoons garlic powder
  • 2 tablespoons smoked paprika
  • 2 tablespoons dried oregano
  • 2 tablespoons dried thyme
  • 1 tablespoon black pepper
  • 1 teaspoon cayenne pepper
  • 4 bay leaves

Directions

  1. In a large pot or bucket, combine the water, salt, brown sugar, chili powder, cumin, garlic powder, smoked paprika, oregano, thyme, black pepper, cayenne pepper, and bay leaves.
  2. Stir until the salt and sugar are dissolved.
  3. Add the turkey to the brine, making sure it is completely submerged.
  4. Cover the pot and refrigerate for at least 8 hours or overnight.
  5. Preheat the oven to 325 degrees F.
  6. Remove the turkey from the brine and pat dry with paper towels.
  7. Place the turkey in a roasting pan and roast for 2-3 hours, or until a thermometer inserted into the thickest part of the thigh reads 165 degrees F.
  8. Allow the turkey to rest for 15-20 minutes before carving.
