Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) refried beans
  • 1 can (10 oz) enchilada sauce
  • 1 can (4 oz) diced green chilies
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 package refrigerated pie crusts
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped fresh cilantro

Directions

  1. Preheat the oven to 375°F.
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned. Drain any excess fat.
  3. Stir in the refried beans, enchilada sauce, green chilies, chili powder, cumin, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  4. Line a pie dish with one of the pie crusts. Pour the beef and bean mixture into the crust. Sprinkle half of the cheddar cheese over the mixture.
  5. Place the second pie crust over the filling. Crimp the edges to seal the pie. Cut slits in the top crust to vent.
  6. Bake for 30-35 minutes, or until the crust is golden brown.
  7. Top with the remaining cheddar cheese and chopped cilantro before serving.
