Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon hawaij spice blend
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 cup chopped kale
  • 1 cup cooked chickpeas
  • Salt and pepper to taste
  • Fresh cilantro or parsley, for garnish

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent.
  3. Add the hawaij spice blend, cumin, turmeric, paprika, cinnamon, and cayenne pepper. Stir well to coat the onions and garlic with the spices.
  4. Pour in the vegetable broth and diced tomatoes. Stir to combine.
  5. Add the carrots, celery, red and yellow bell peppers, zucchini, chopped kale, and cooked chickpeas.
