- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced

- 1 can (14 oz) tomato sauce
- 1 cup chicken broth

- 8 corn tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- Cilantro, chopped (for garnish)

Directions
- Preheat oven to 375°F.
- In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is no longer pink. Drain any excess fat.
- Stir in chili powder, cumin, paprika, cayenne pepper, salt, and pepper.
- Add tomato sauce and chicken broth, simmer for 10 minutes.
- In a separate saucepan, combine chili powder, cumin, garlic powder, onion powder, salt, pepper, and water. Bring to a simmer and cook for 10 minutes to make the enchilada sauce.
- Dip each tortilla in the enchilada sauce, then fill with beef mixture and cheese. Roll up and place seam side down in a greased baking dish.
- Pour remaining enchilada sauce over the top, then sprinkle with remaining cheese.
- Bake for 20-25 minutes, until cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream.
