These beef enchiladas are filled with seasoned ground beef, wrapped in corn tortillas, topped with a homemade red enchilada sauce, and baked until bubbly and golden. Serve with some Mexican rice and beans for a complete meal.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 can (14 oz) tomato sauce
  • 1 cup chicken broth
  • 1/4 cup chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • Cilantro, chopped (for garnish)
  • Sour cream (for serving)

Directions

  1. Preheat oven to 375°F.
  2. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is no longer pink. Drain any excess fat.
  3. Stir in chili powder, cumin, paprika, cayenne pepper, salt, and pepper.
  4. Add tomato sauce and chicken broth, simmer for 10 minutes.
  5. In a separate saucepan, combine chili powder, cumin, garlic powder, onion powder, salt, pepper, and water. Bring to a simmer and cook for 10 minutes to make the enchilada sauce.
  6. Dip each tortilla in the enchilada sauce, then fill with beef mixture and cheese. Roll up and place seam side down in a greased baking dish.
  7. Pour remaining enchilada sauce over the top, then sprinkle with remaining cheese.
  8. Bake for 20-25 minutes, until cheese is melted and bubbly.
  9. Garnish with chopped cilantro and serve with sour cream.
