Ingredients

  • 1 cup of almonds
  • 1 cup of cashews
  • 1/2 cup of dried cranberries
  • 1/2 cup of dried apricots
  • 1/4 cup of honey
  • 2 tablespoons of olive oil
  • 2 tablespoons of brown sugar
  • 1 teaspoon of cinnamon

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together the almonds, cashews, cranberries, and apricots.
  3. In a separate bowl, whisk together the honey, olive oil, brown sugar, and cinnamon.
  4. Pour the honey mixture over the nut and fruit mixture and stir until everything is evenly coated.
  5. Spread the mixture on a baking sheet and bake for 15-20 minutes, stirring halfway through.
  6. Remove from oven and let cool.
