Ingredients

  • 4 fresh sardines, cleaned and deboned
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Directions

  1. In a large skillet over medium heat, heat the olive oil.
  2. Add the onion and bell peppers and cook for 5 minutes, stirring occasionally.
  3. Add the garlic, oregano, thyme, and red pepper flakes, and cook for 1 minute.
  4. Add the sardines and cook for 3 minutes, stirring occasionally.
  5. Season with salt and pepper, to taste.
  6. Serve hot with your favorite side dish.
