Ingredients
- 1 lb green beans, trimmed and cut into 1-inch pieces
- 1 pint cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup extra-virgin olive oil
- Salt and freshly ground black pepper to taste
Directions
- Bring a large pot of salted water to a boil over high heat.
- Add the green beans and cook for 3 to 4 minutes, until tender-crisp.
- Drain the green beans and rinse with cold water to stop the cooking process.
- Transfer the green beans to a large bowl and add the tomatoes and feta cheese.
- Drizzle the olive oil over the salad and season with salt and pepper to taste.
- Toss to combine and serve.
