Ingredients

  • 1 lb green beans, trimmed and cut into 1-inch pieces
  • 1 pint cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra-virgin olive oil
  • Salt and freshly ground black pepper to taste

Directions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the green beans and cook for 3 to 4 minutes, until tender-crisp.
  3. Drain the green beans and rinse with cold water to stop the cooking process.
  4. Transfer the green beans to a large bowl and add the tomatoes and feta cheese.
  5. Drizzle the olive oil over the salad and season with salt and pepper to taste.
  6. Toss to combine and serve.
