Ingredients

  • 1 pound of salted cod
  • 2 large onions, diced
  • 2 bell peppers, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried oregano
  • 1 teaspoon of hot pepper sauce
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Directions

  1. Soak the salted cod in water for 1 hour or more to remove excess salt.
  2. Drain and pat dry with paper towels.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the onions, bell peppers, and garlic and cook until the vegetables are softened, about 5 minutes.
  5. Add the cumin, oregano, and hot pepper sauce and stir to combine.
  6. Add the cod and cook, stirring occasionally, for 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve with your favorite sides.
