Ingredients

  • 3 large egg whites
  • 4 ½ cups (1 lb) powdered sugar, sifted
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon clear vanilla extract or clear flavoring of choice

Directions

  1. In the bowl of an electric mixer, beat the egg whites until foamy.
  2. Add the cream of tartar and beat until soft peaks form.
  3. Add the powdered sugar, 1 cup at a time, and beat until combined.
  4. Add the vanilla extract and beat until stiff, glossy peaks form.
  5. Use immediately for decorating, or store in an airtight container at room temperature for up to 1 week.
