Ingredients

  • 2 cups cubed sweet potatoes
  • 2 cups cubed parsnips
  • 1 cup cubed carrots
  • 1 cup cubed turnips
  • 1 cup diced onions
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine the sweet potatoes, parsnips, carrots, turnips, and onions.
  3. Drizzle the olive oil over the vegetables and sprinkle with the garlic powder, thyme, salt, and pepper.
  4. Toss the vegetables to coat them with the oil and seasonings.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Bake in the preheated oven for 30-35 minutes, stirring once halfway through, until the vegetables are tender and lightly browned.
