Ingredients

  • 1 lb scallops
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1 cup frozen spinach, thawed and drained
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Directions

  1. Melt butter in a large skillet over medium-high heat.
  2. Add the scallops and cook for about 5 minutes, stirring occasionally, until they are golden-brown and cooked through.
  3. Remove the scallops from the skillet and set aside.
  4. Add the heavy cream to the skillet and heat until it starts to simmer.
  5. Add the spinach, garlic powder, salt, and pepper to the cream and stir until the spinach is fully incorporated.
  6. Add the scallops back to the skillet and stir to coat with the sauce.
  7. Simmer for 5-7 minutes, stirring occasionally, until the sauce is thickened and the scallops are cooked through.
  8. Serve warm.
