- 2 ripe mangoes, peeled and cubed
- 1/4 cup granulated sugar
- 1 tablespoon lime juice
- 1 teaspoon unflavored gelatin
- 2 tablespoons water
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Directions
- In a blender or food processor, puree the mangoes until smooth.
- In a small saucepan, combine the granulated sugar and lime juice. Heat over medium heat, stirring constantly, until the sugar has dissolved.
- In a separate small bowl, sprinkle the gelatin over the water and let it sit for 5 minutes to bloom.
- Add the bloomed gelatin mixture to the warm sugar and lime mixture, stirring until the gelatin has completely dissolved. Remove from heat.
- In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
