Ingredients

  • 2 pounds stewing beef, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 2 cups dark beer
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.
  2. Add the beef in batches and brown it on all sides. Remove the browned beef from the pot and set aside.
  3. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and aromatic.
  4. Add the carrots and celery. Cook for another 5 minutes, stirring occasionally.
  5. Return the beef to the pot and add the diced tomatoes, beef broth, dark beer, tomato paste, bay leaves, dried thyme, salt, and black pepper.
  6. Stir everything together to combine. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low and cover the pot. Simmer for 1.5 to 2 hours, or until the beef is tender.
  8. Taste and adjust the seasoning if necessary.
  9. Remove the bay leaves before serving.
  10. Garnish with fresh parsley and serve hot.
