Ingredients

  • 1 pound ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 10 soft flour tortillas
  • 2 cups shredded cheese (such as cheddar or Mexican blend)
  • 2 cups enchilada sauce
  • Optional toppings: diced tomatoes, sliced olives, chopped cilantro, sour cream

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through. Drain any excess grease.
  3. Add the chili powder, cumin, paprika, cayenne pepper (if desired), salt, and pepper to the skillet. Stir well to combine all the ingredients and cook for an additional 2-3 minutes to allow the flavors to meld.
  4. Remove the skillet from heat and set aside.
  5. Pour a small amount of enchilada sauce into the bottom of a baking dish to coat the surface.
  6. Warm the tortillas in the microwave or on a griddle until soft.
  7. Place a spoonful of the ground beef mixture onto the center of each tortilla. Sprinkle with shredded cheese before rolling up the tortilla tightly. Place the rolled enchiladas seam-side down in the baking dish.
  8. Pour the remaining enchilada sauce over the top of the enchiladas, ensuring that they are well coated.
  9. Sprinkle additional shredded cheese on top of the enchiladas.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  11. Remove the foil and continue baking for an additional 5 minutes to lightly brown the cheese.
  12. Once done, remove from the oven and allow the enchiladas to cool for a few minutes before serving.
  13. Garnish with your favorite toppings such as diced tomatoes, sliced olives, chopped cilantro, and sour cream.
  14. Serve warm and enjoy!
