1 pound pork tenderloin, trimmed and cut into 1-inch cubes
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon capers, drained
2 tablespoons chopped fresh parsley
Directions
Heat the olive oil in a large skillet over medium-high heat.
Season the pork cubes with salt and pepper. Add to the skillet and cook, stirring occasionally, until browned and cooked through, about 7 minutes.
In a small bowl, whisk together the balsamic vinegar, honey, and capers. Pour over the pork cubes and cook until the sauce is thickened, about 1 minute.
Remove the skillet from the heat and sprinkle with parsley. Serve warm.
