Modern Colcannon with a Twist

Ingredients

• 4 slices of bacon, chopped
• 1 small onion, chopped
• 2 cloves of garlic, minced
• 4 cups of kale, chopped
• 4 cups of mashed potatoes
• 1/2 cup of heavy cream
• Salt and pepper to taste
• 2 tablespoons of butter

Directions

1. In a large skillet, cook the bacon until crispy. Remove the bacon from the skillet and set aside.
2. In the same skillet, sauté the onions and garlic in the bacon grease until they become translucent and fragrant.
3. Add the chopped kale to the skillet and cook until wilted.
4. In a large mixing bowl, combine the mashed potatoes and heavy cream. Mix well.
5. Add the cooked bacon, sautéed onions and garlic, and wilted kale to the mashed potatoes. Mix until everything is well incorporated.
6. Season with salt and pepper to taste.
7. In a separate skillet, melt the butter over medium heat.
8. Add the mashed potato mixture to the skillet and cook until heated through and slightly browned on the bottom. Flip and cook the other side until golden brown.
