Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2/3 cup shortening
- 6-7 tablespoons ice water
- 2 cups fresh or frozen cherries, pitted
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 egg, beaten
- 1 tablespoon milk
- 2 tablespoons granulated sugar
- Vanilla ice cream (optional)
Directions
- In a large mixing bowl, combine the flour and salt. Cut in the shortening until the mixture resembles coarse crumbs.
- Sprinkle the ice water, 1 tablespoon at a time, over the mixture and toss with a fork until the dough is moistened and forms a ball.
- Divide the dough in half and shape each portion into a disk. On a lightly floured surface, roll out one disk to 1/8-inch thickness. Cut out 4-inch circles using a round cookie cutter or a glass. Repeat with the remaining dough.
- Preheat the oven to 375°F (190°C).
- In a medium saucepan, combine the cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat.
- Place the dough circles onto a baking sheet lined with parchment paper. Spoon about 1-2 tablespoons of the cherry filling onto each dough circle, leaving a small border. Fold the dough over the filling, pressing the edges to seal.
- In a small bowl, whisk together the beaten egg and milk. Brush the egg wash over the tops of the pies. Sprinkle with granulated sugar.
- Bake for 20-25 minutes, or until the pies are golden brown and the filling is bubbly.
- Remove from the oven and let cool for a few minutes. Serve warm with a scoop of vanilla ice cream, if desired.
