Ingredients

  • 2 cups all-purpose flour

  • 2/3 cup shortening
  • 6-7 tablespoons ice water

  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 egg, beaten
  • 1 tablespoon milk
  • 2 tablespoons granulated sugar
  • Vanilla ice cream (optional)

Directions

  1. In a large mixing bowl, combine the flour and salt. Cut in the shortening until the mixture resembles coarse crumbs.
  2. Sprinkle the ice water, 1 tablespoon at a time, over the mixture and toss with a fork until the dough is moistened and forms a ball.
  3. Divide the dough in half and shape each portion into a disk. On a lightly floured surface, roll out one disk to 1/8-inch thickness. Cut out 4-inch circles using a round cookie cutter or a glass. Repeat with the remaining dough.
  4. Preheat the oven to 375°F (190°C).
  5. In a medium saucepan, combine the cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat.
  6. Place the dough circles onto a baking sheet lined with parchment paper. Spoon about 1-2 tablespoons of the cherry filling onto each dough circle, leaving a small border. Fold the dough over the filling, pressing the edges to seal.
  7. In a small bowl, whisk together the beaten egg and milk. Brush the egg wash over the tops of the pies. Sprinkle with granulated sugar.
  8. Bake for 20-25 minutes, or until the pies are golden brown and the filling is bubbly.
  9. Remove from the oven and let cool for a few minutes. Serve warm with a scoop of vanilla ice cream, if desired.
