Ingredients

  • 1 cup quinoa
  • 2 cups water
  • Juice of 1 lemon
  • 2 tablespoons olive oil

  • 1 garlic clove, minced

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup pitted kalamata olives, sliced

Directions

  1. Rinse the quinoa under cold water to remove any impurities.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed. Fluff the quinoa with a fork and let it cool.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper.
