Ingredients

  • 2 large kohlrabi, peeled and cubed
  • 2 tablespoons butter
  • 1/2 cup vegetable broth
  • 1/2 cup sour cream
  • 1/4 cup freshly chopped parsley
  • Salt and pepper to taste

Directions

  1. Melt the butter in a large skillet over medium-high heat.
  2. Add the kohlrabi and sauté for 3-4 minutes, stirring frequently.
  3. Add the vegetable broth and bring to a boil.
  4. Reduce the heat to low and simmer for 10 minutes, stirring occasionally, until the kohlrabi is tender.
  5. Stir in the sour cream and parsley and cook for an additional 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot.
