Ingredients
- 2 large kohlrabi, peeled and cubed
- 2 tablespoons butter
- 1/2 cup vegetable broth
- 1/2 cup sour cream
- 1/4 cup freshly chopped parsley
- Salt and pepper to taste
Directions
- Melt the butter in a large skillet over medium-high heat.
- Add the kohlrabi and sauté for 3-4 minutes, stirring frequently.
- Add the vegetable broth and bring to a boil.
- Reduce the heat to low and simmer for 10 minutes, stirring occasionally, until the kohlrabi is tender.
- Stir in the sour cream and parsley and cook for an additional 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot.
