Ingredients
2 large kohlrabi, peeled and cubed
2 tablespoons butter
1/2 cup vegetable broth
1/2 cup sour cream
1/4 cup freshly chopped parsley
Salt and pepper to taste
Directions
Melt the butter in a large skillet over medium-high heat.
Add the kohlrabi and sauté for 3-4 minutes, stirring frequently.
Add the vegetable broth and bring to a boil.
Reduce the heat to low and simmer for 10 minutes, stirring occasionally, until the kohlrabi is tender.
Stir in the sour cream and parsley and cook for an additional 2-3 minutes.
Season with salt and pepper to taste.
Serve hot.
