Ingredients

  • 1 (3-pound) boneless pork loin
  • 1 pound Italian sausage
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup mixed olives, pitted and chopped
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh oregano
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon zest
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the pork loin by making a horizontal cut along the length of the pork loin, stopping about 1/2 inch from the other side. Open up the pork loin like a book and pound it with a meat mallet to even thickness.
  3. In a large skillet, cook the Italian sausage over medium heat until browned and cooked through. Remove from heat.
  4. In a mixing bowl, combine the cooked Italian sausage, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, chopped rosemary, dried oregano, salt, black pepper, and red pepper flakes. Mix well.
  5. Spread the sausage mixture evenly over the opened pork loin, leaving a 1-inch border. Roll up the pork loin tightly and secure with kitchen twine at 1-inch intervals.
  6. Place the stuffed pork loin on a baking sheet and roast in the preheated oven for about 1 1/2 hours, or until the internal temperature reaches 145°F (63°C).
  7. While the pork loin is roasting, prepare the olive relish by combining the chopped olives, chopped basil, chopped parsley, minced garlic, extra virgin olive oil, lemon zest, salt, and pepper in a bowl. Mix well.
  8. Remove the pork loin from the oven and let it rest for 10 minutes. Slice the pork loin into thick slices and serve with the olive relish.
