Ingredients

  • 4 ounces chicken breast, diced
  • 4 ounces shrimp, peeled and deveined
  • 1 cup mixed vegetables (carrots, peas, and corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 tablespoon sambal or chili sauce (optional)
  • Salt and pepper to taste
  • Green onions, thinly sliced for garnish
  • Fried shallots for garnish

Directions

  1. Heat a large wok or skillet over medium heat. Add the vegetable oil and garlic, and sauté until fragrant.
  2. Add the diced onion and shrimp paste (if using), and cook until the onion is translucent.
  3. Push the garlic and onion mixture to one side of the wok, and pour the beaten eggs onto the other side. Scramble the eggs until they are fully cooked, then mix them together with the garlic and onion.
  4. Add the diced chicken breast and shrimp to the wok, and stir-fry until they are cooked through.
  5. Add the mixed vegetables to the wok, and stir-fry until they are tender.
  6. Add the cooked jasmine rice to the wok, breaking up any clumps with a spatula. Stir-fry the rice with the other ingredients, ensuring that everything is evenly mixed.
  7. Add the soy sauce, sweet soy sauce, and sambal or chili sauce (if using). Stir-fry for an additional 2-3 minutes to allow the flavors to blend.
  8. Taste and season the fried rice with salt and pepper as needed.
