Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, for garnish
Directions
- Rinse the lentils under running water and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, celery, and garlic to the pot. Cook until the vegetables are soft and fragrant.
- Add the diced tomatoes, vegetable broth, dried thyme, dried oregano, bay leaf, salt, and pepper to the pot. Stir well.
- Bring the soup to a boil, then reduce heat to low. Cover and simmer for 30 minutes, or until the lentils are tender.
- Remove the bay leaf from the soup.
- Using an immersion blender or regular blender, puree half of the soup until smooth. This will help thicken the soup while still leaving some texture.
- Return the pureed soup to the pot and stir well. If desired, add some hot water to adjust the soup's consistency.
