Ingredients
1 cup quinoa, rinsed
2 cups vegetable broth
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper, to taste
Directions
In a medium saucepan, heat the olive oil over medium heat.
Add the garlic and sauté for 1 minute.
Add the rinsed quinoa and stir to coat with the garlic and olive oil.
Add the vegetable broth and bring to a boil.
Reduce the heat to a simmer and cover the saucepan with a lid.
Cook for 15 minutes, or until the quinoa is tender.
Remove from heat and fluff with a fork.
Season with salt and pepper, to taste.
Serve and enjoy!
