Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Directions

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the garlic and sauté for 1 minute.
  3. Add the rinsed quinoa and stir to coat with the garlic and olive oil.
  4. Add the vegetable broth and bring to a boil.
  5. Reduce the heat to a simmer and cover the saucepan with a lid.
  6. Cook for 15 minutes, or until the quinoa is tender.
  7. Remove from heat and fluff with a fork.
  8. Season with salt and pepper, to taste.
  9. Serve and enjoy!
