Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a medium bowl, sift together the flour, baking powder, baking soda and salt.
In a large bowl, cream together the melted butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in the dry ingredients. Fold in the peaches.
Drop cookie dough by rounded tablespoonfuls onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven, or until the edges are lightly toasted. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
