Ingredients
- 1 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, melted and cooled
- 3/4 cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup dried peaches, chopped
Directions
- Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- In a medium bowl, sift together the flour, baking powder, baking soda and salt.
- In a large bowl, cream together the melted butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in the dry ingredients. Fold in the peaches.
- Drop cookie dough by rounded tablespoonfuls onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven, or until the edges are lightly toasted. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
