Ingredients

  • 1 pound squid, cleaned and cut into rings
  • 2 tablespoons vegetable oil
  • 1/2 cup pineapple, cut into small cubes
  • 1 clove garlic, minced
  • 1 teaspoon fish sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the squid and cook for 2-3 minutes, until lightly golden.
  3. Add the pineapple, garlic, fish sauce, sugar, salt and pepper. Cook for 2-3 minutes, stirring occasionally.
  4. Add the cilantro and lime juice and cook for 1 minute.
  5. Serve warm with a side of steamed rice and enjoy!
