Ingredients

  • 2 lbs fresh green beans, trimmed
  • 1 large tomato, chopped
  • 1 red onion, diced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Directions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-5 minutes, or until they are tender but still crisp.
  2. Drain the green beans and run them under cold water to stop the cooking process. Set aside.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper. Set aside.
  4. In a large bowl, combine the cooked green beans, chopped tomato, and diced red onion. Pour the dressing over the top and toss to combine.
  5. Serve the salad chilled or at room temperature.
