Ingredients

  • 3 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 2 avocados, peeled and diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Directions

  1. In a large bowl, combine chicken breasts, olive oil, chili powder, garlic powder, cumin, salt, and pepper. Toss to coat.
  2. Heat a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes, flipping halfway through, until chicken is cooked through.
  3. In a medium bowl, combine mayonnaise, avocado, red onion, cilantro, and lime juice. Mix until combined.
  4. Once chicken is cooked, remove from heat and dice. Add diced chicken to the bowl with the avocado mixture and mix until combined.
  5. Serve the chicken salad in a bowl or on a bed of lettuce.
