Ingredients

Directions

  1. In a large mixing bowl, combine the flour, salt, and sugar.
  2. Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Slowly add the ice water, one tablespoon at a time, and mix until the dough comes together.
  4. Divide the dough into two equal portions, shape into disks, and wrap each in plastic wrap. Refrigerate for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. In a separate bowl, combine the fresh berries, sugar, cornstarch, and lemon juice. Toss well to coat the berries evenly.
  7. Roll out one disk of the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Place the rolled dough into the pie dish.
  8. Pour the berry mixture into the prepared pie crust.
  9. Roll out the second disk of dough and carefully place it on top of the berry filling. Trim the excess dough and crimp the edges to seal the pie.
