Ingredients

  • 2 cucumbers, peeled and chopped
  • 1 onion, chopped
  • 1/4 cup vegetable or chicken broth
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh dill
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh parsley, chopped

Directions

  1. In a large pot, combine the cucumbers, onion, broth, salt, and pepper. Bring to a boil over medium-high heat.
  2. Reduce the heat to low and simmer, stirring occasionally, for 10 minutes.
  3. Remove the pot from the heat and stir in the dill, yogurt, and parsley.
  4. Transfer the soup to a blender or food processor and blend until smooth.
  5. Serve the soup chilled.
