Ingredients

  • 1 cup split yellow lentils (toor dal)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cups spinach, chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 3 cups water
  • 2 tbsp ghee or oil
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • Fresh cilantro for garnish

Directions

  1. In a pressure cooker, rinse the lentils and add water, turmeric powder, and salt. Cook until lentils are soft.
  2. In a large pot, heat ghee/oil and add cumin seeds. Once they sizzle, add onions, garlic, and ginger. Saute until onions are translucent.
  3. Add tomatoes, coriander powder, red chili powder, and salt. Cook until tomatoes are soft.
  4. Add cooked lentils along with spinach. Simmer for 5-10 minutes.
  5. Garnish with cilantro and serve hot with rice or naan.
