Ingredients

  • Lobster tails - 4
  • Garlic cloves - 4, minced
  • Ginger - 1 tablespoon, grated
  • Red chili flakes - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Ground coriander - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Honey - 1 tablespoon
  • Fresh cilantro - a handful, chopped
  • Fresh mint - a handful, chopped
  • Fresh basil - a handful, chopped
  • Cucumber - 1, thinly sliced
  • Red onion - 1/2, thinly sliced
  • Lime zest - from 1 lime

Directions

  1. In a small bowl, mix together the minced garlic, grated ginger, red chili flakes, ground cumin, ground coriander, paprika, salt, black pepper, olive oil, lime juice, and honey. This will be the marinade for our lobster.
  2. Using kitchen shears, cut through the top shell of the lobster tails. Gently pull out the meat from the shells, keeping it attached at the base. Place the lobster tails in a shallow dish and brush them generously with the marinade. Set aside for 30 minutes to allow the flavors to infuse.
  3. In the meantime, prepare the herb salad. In a bowl, combine the chopped cilantro, mint, basil, cucumber slices, red onion slices, and lime zest. Toss everything together gently to combine. Set aside.
  4. Heat a grill or grill pan over medium-high heat. Once hot, place the marinated lobster tails on the grill, meat side down. Cook for 4-5 minutes, then flip them over and cook for an additional 2-3 minutes until the lobster meat is opaque and cooked through.
  5. Remove the lobster tails from the grill and let them rest for a couple of minutes. Slice each tail into medallions, leaving the base intact for presentation.
  6. To serve, place a generous bed of the herb salad on each plate. Arrange the lobster medallions on top of the salad and drizzle with any remaining marinade. Garnish with extra herbs and lime wedges, if desired.
  7. Enjoy your exquisite Jungle Lobster creation!
