  • 1 cup shelled pistachios
  • 1 cup semisweet chocolate chips
  • 1/4 cup unsalted butter
  • 1/2 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1/4 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon baking powder
  • Powdered sugar for dusting

  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a food processor, pulse the shelled pistachios until finely ground. Set aside.
  3. In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  4. In a separate bowl, whisk together the powdered sugar, vanilla extract, salt, and heavy cream until well combined.
  5. Add the melted chocolate mixture to the powdered sugar mixture and stir until creamy.
  6. In another bowl, sift together the all-purpose flour, cocoa powder, and baking powder.
  7. Gradually add the dry ingredients to the chocolate mixture, stirring until well combined.
  8. Fold in the ground pistachios and mix until evenly distributed throughout the batter.
  9. Pour the batter into the prepared baking dish and spread it evenly.
  10. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  11. Remove from the oven and allow to cool completely in the baking dish.
  12. Once cooled, use a checkers mold or a sharp knife to cut the baked batter into small squares.
  13. Dust the pistachio chocolate checkers with powdered sugar for an elegant touch.
  14. Serve and enjoy!
