Ingredients
- 4 large potatoes
- 1 tbsp olive oil
- 1/2 onion, finely chopped
- 2 cloves of garlic, minced
- 1/2 lb ground beef
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup frozen peas
- 1/4 cup raisins
- 1/4 cup chopped olives
- 2 eggs, beaten
- 1/2 cup breadcrumbs
- Vegetable oil for frying
Directions
- Boil the potatoes until they are tender. Let them cool, then peel and mash them.
- In a skillet, heat the olive oil and sauté the onion and garlic until soft. Add the ground beef, cumin, paprika, salt, and pepper. Cook until the meat is browned.
- Stir in the peas, raisins, and olives. Cook for another few minutes, then remove from heat.
- Take a small portion of the mashed potatoes and flatten it in your palm. Place a spoonful of the meat mixture in the center and shape the potato around it to form a ball.
- Dip the stuffed potato in the beaten eggs, then roll it in breadcrumbs to coat.
- Heat the vegetable oil in a pan. Fry the stuffed potatoes until golden brown on all sides.
- Remove from the oil and place on paper towels to drain excess oil. Serve hot and enjoy!
