Ingredients

  • 4 large potatoes
  • 1 tbsp olive oil
  • 1/2 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 lb ground beef
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup frozen peas
  • 1/4 cup raisins
  • 1/4 cup chopped olives
  • 2 eggs, beaten
  • 1/2 cup breadcrumbs
  • Vegetable oil for frying

Directions

  1. Boil the potatoes until they are tender. Let them cool, then peel and mash them.
  2. In a skillet, heat the olive oil and sauté the onion and garlic until soft. Add the ground beef, cumin, paprika, salt, and pepper. Cook until the meat is browned.
  3. Stir in the peas, raisins, and olives. Cook for another few minutes, then remove from heat.
  4. Take a small portion of the mashed potatoes and flatten it in your palm. Place a spoonful of the meat mixture in the center and shape the potato around it to form a ball.
  5. Dip the stuffed potato in the beaten eggs, then roll it in breadcrumbs to coat.
  6. Heat the vegetable oil in a pan. Fry the stuffed potatoes until golden brown on all sides.
  7. Remove from the oil and place on paper towels to drain excess oil. Serve hot and enjoy!
