Indulge in the sweet and tangy flavors of this classic homemade fresh cherry pie. Made with juicy, ripe cherries and a flaky buttery crust, this dessert is perfect for summertime gatherings or special occasions. The pie is easy to make and will impress your family and friends with its vibrant colors and mouthwatering taste. Serve it warm with a scoop of vanilla ice cream for a truly decadent treat.

Ingredients

  • 2 cups fresh cherries, pitted and halved
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon almond extract
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 2 pie crusts, homemade or store-bought
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the pitted and halved cherries, granulated sugar, cornstarch, almond extract, lemon juice, and salt. Mix well until the cherries are coated in the sugar mixture. Let it sit for 10 minutes to allow the cherries to release their juices.
  3. Roll out one of the pie crusts and place it in a 9-inch pie dish, trimming any excess dough.
  4. Pour the cherry filling into the pie crust, spreading it evenly.
  5. Dot the filling with small pieces of butter to add richness to the pie.
  6. Roll out the second pie crust and place it over the cherry filling. Trim the edges and crimp to seal the pie. You can also create a lattice crust if desired.
  7. Brush the top crust with the beaten egg for a golden finish.
  8. Sprinkle the turbinado sugar over the pie to add crunch and sweetness.
  9. Place the pie on a baking sheet to catch any drips and bake it in the preheated oven for 45-50 minutes until the crust is golden and the filling is bubbly.
  10. Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving. This allows the filling to set.
  11. Once cooled, slice the pie and serve it on its own or with a scoop of vanilla ice cream. Enjoy!
