Ingredients

  • 1 whole chicken, cut into serving pieces
  • 4 cups coconut water
  • 2 cups young coconut meat, cut into strips
  • 1 tablespoon ginger, minced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 2 cups malunggay leaves (or spinach)
  • Salt and pepper to taste

Directions

  1. In a large pot, heat some oil over medium heat. Sauté the ginger, garlic, and onion until fragrant.
  2. Add the chicken pieces and cook until lightly browned on all sides.
  3. Pour in the coconut water and bring to a boil. Reduce the heat and let it simmer for about 30-40 minutes or until the chicken is tender.
  4. Add the young coconut meat and fish sauce. Simmer for another 5 minutes.
  5. Season with salt and pepper to taste. Stir in the malunggay leaves and cook for another minute.
  6. Remove from heat and serve hot.
