Ingredients
- 1 tablespoon olive oil
- 2 baby leeks, washed and sliced
- 4 slices of whole wheat bread
- 4 slices of cheddar cheese
- 1 large tomato, sliced
- Salt and pepper to taste
- Butter for grilling
Directions
- In a pan, heat olive oil over medium heat. Add the sliced baby leeks and sauté until they are soft and caramelized, about 5 minutes. Season with salt and pepper.
- Take two slices of bread and place a slice of cheddar cheese on each. Top with the sautéed baby leeks and tomato slices. Add another slice of cheddar cheese on top and cover with the remaining two bread slices.
- Spread butter on the outside of the bread slices and grill in a pan over medium heat until the bread is golden brown and the cheese has melted, about 2-3 minutes per side.
