Ingredients

  • 1 pound beef stew meat, cut into cubes
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15.5 ounces) kidney beans, drained and rinsed
  • 1 can (15.5 ounces) pinto beans, drained and rinsed
  • 1 cup beef broth
  • Salt and pepper to taste
  • Chopped parsley, for garnish

Directions

  1. In a bowl, toss the beef stew meat with Cajun seasoning, ensuring all pieces are coated.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  3. Add the seasoned beef to the pot, and cook until browned on all sides. Remove the beef from the pot and set aside.
  4. In the same pot, add the diced onion, diced green bell pepper, and minced garlic. Sauté until the vegetables are softened.
  5. Return the beef to the pot and add the diced tomatoes, kidney beans, pinto beans, and beef broth. Season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally.
  7. Taste and adjust the seasoning if necessary. If the chili is too thick, add additional beef broth or water to thin it out.
  8. Serve the Cajun-Style Beef and Beans hot, garnished with chopped parsley. Enjoy!
