Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup water
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 hoagie rolls
  • 4 slices provolone cheese
  • 1/4 cup butter
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup sliced pickles

Directions

  1. Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius).
  2. Season the beef chuck roast with salt and pepper.
  3. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Sear the beef on all sides until browned, about 4-5 minutes per side. Remove the beef from the pot and set aside.
  5. Add the sliced onions and minced garlic to the pot and cook until softened and lightly caramelized, about 5 minutes.
  6. Add the beef broth, water, Worcestershire sauce, dried thyme, and dried rosemary to the pot. Bring to a boil.
  7. Return the beef to the pot, cover with a lid, and transfer to the preheated oven.
  8. Cook for 2-3 hours, or until the beef is tender and easily shreds with a fork.
  9. Remove the pot from the oven and transfer the beef to a cutting board. Let it rest for a few minutes before slicing.
  10. Meanwhile, split the hoagie rolls lengthwise and line each roll with a slice of provolone cheese.
  11. Place the rolls in the oven under the broiler until the cheese is melted and bubbly.
  12. In a small saucepan, melt the butter and brush it onto the toasted rolls.
  13. In a small bowl, mix together the mayonnaise and Dijon mustard.
  14. Spread the mayo-mustard mixture on the bottom halves of the hoagie rolls.
  15. Layer the sliced beef on top of the mayo-mustard mixture, followed by the caramelized onions and sliced pickles.
  16. Serve the beef dip sandwiches with a side of au jus for dipping.
  17. Enjoy the deliciousness!
