Ingredients

  • 3 pounds pork shoulder
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 hamburger buns

Directions

  1. Preheat the oven to 325°F (160°C).
  2. Season the pork shoulder with salt, pepper, and smoked paprika.
  3. In a large Dutch oven or oven-safe pot, heat some oil over medium-high heat.
  4. Brown the pork shoulder on all sides until nicely seared. Remove from the pot and set aside.
  5. In the same pot, add the diced onion and minced garlic. Cook until softened and fragrant.
  6. Add the barbecue sauce, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, mustard, salt, and pepper to the pot. Stir well to combine.
  7. Return the pork shoulder to the pot, ensuring it is covered with the sauce.
  8. Cover the pot with a lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the pork is tender and easily pulls apart with a fork.
  9. Once the pork is cooked, remove it from the pot and shred it using two forks. Set aside.
  10. Place the pot with the sauce on the stovetop over medium heat. Simmer the sauce until it thickens and reduces slightly.
  11. Return the shredded pork to the pot with the sauce and stir well to coat the meat.
  12. Toast the hamburger buns until lightly golden.
  13. Spoon the BBQ pork onto the bottom half of each bun, and top with the other half.
