Ingredients
- 1 pound ground pork
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon fish sauce
- 2 teaspoons fresh ginger, minced
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 tablespoon vegetable oil
- 1 cup cooked jasmine rice
- 1/2 cup coconut milk
- 1 teaspoon lime zest
- 1 tablespoon lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 head iceberg lettuce
- 1 carrot, julienned
- 1/2 cucumber, seeded and julienned
- 1/4 cup peanuts, chopped
- Lime wedges, for serving
Directions
- In a large bowl, combine the ground pork, soy sauce, hoisin sauce, fish sauce, minced ginger, minced garlic, red pepper flakes, salt, and pepper. Mix well to combine all the ingredients.
- Heat the vegetable oil in a large skillet over medium heat. Add the pork mixture and cook until browned and cooked through, breaking it up with a spoon, for about 8-10 minutes. Set aside.
- Meanwhile, prepare the Coconut Lime Rice. In a saucepan, combine the cooked jasmine rice, coconut milk, lime zest, lime juice, and salt. Cook over low heat until heated through, stirring occasionally. Remove from heat and stir in the chopped cilantro.
- To assemble the lettuce wraps, take a large lettuce leaf and place a spoonful of the cooked ground pork in the center. Add some julienned carrot, cucumber, and chopped peanuts on top. Drizzle with additional soy sauce or hoisin sauce if desired.
- Serve the lettuce wraps with the Coconut Lime Rice and lime wedges on the side. Enjoy!
