Ingredients

  • 1 ½ lbs (680g) chicken breast, boneless and skinless, cut into bite-sized pieces
  • ¼ cup cornstarch

  • 2 tablespoons vegetable oil
  • ½ cup ketchup
  • ½ cup rice vinegar
  • ½ cup honey
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 bell pepper, cut into chunks
  • 1 small onion, cut into chunks
  • 1 pineapple, cut into chunks
  • 2 green onions, sliced (for garnish)

Directions

  1. In a bowl, combine the cornstarch, salt, and black pepper. Toss the chicken pieces in the mixture until well-coated.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the chicken pieces and cook until golden and crispy, about 5-6 minutes.
  3. Meanwhile, in another bowl, whisk together the ketchup, rice vinegar, honey, soy sauce, garlic powder, and ginger powder. Set aside.
  4. Remove the cooked chicken from the pan and set aside. In the same pan, add the bell pepper and onion. Cook for 2-3 minutes until slightly softened.
