Ingredients
- 1 ½ lbs (680g) chicken breast, boneless and skinless, cut into bite-sized pieces
- ¼ cup cornstarch
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons vegetable oil
- ½ cup ketchup
- ½ cup rice vinegar
- ½ cup honey
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 bell pepper, cut into chunks
- 1 small onion, cut into chunks
- 1 pineapple, cut into chunks
- 2 green onions, sliced (for garnish)
Directions
- In a bowl, combine the cornstarch, salt, and black pepper. Toss the chicken pieces in the mixture until well-coated.
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the chicken pieces and cook until golden and crispy, about 5-6 minutes.
- Meanwhile, in another bowl, whisk together the ketchup, rice vinegar, honey, soy sauce, garlic powder, and ginger powder. Set aside.
- Remove the cooked chicken from the pan and set aside. In the same pan, add the bell pepper and onion. Cook for 2-3 minutes until slightly softened.
- Add the pineapple chunks to the pan and cook for another 2 minutes.
- Pour the prepared sweet and sour sauce over the vegetables and stir well to combine.
- Return the cooked chicken to the pan and toss to coat it in the glaze.
- Cook for an additional 2-3 minutes until the chicken is heated through and the sauce has thickened.
