Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced

  • 1 zucchini, diced
  • 1 cup fresh or frozen corn kernels
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and pepper, to taste

Directions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onion and garlic and sauté for 2-3 minutes until fragrant.
  3. Transfer the onion and garlic mixture to the slow cooker.
  4. Add carrots, celery, bell pepper, zucchini, corn, diced tomatoes with their juice, vegetable broth, dried thyme, dried basil, bay leaf, salt, and pepper to the slow cooker.
  5. Stir well to combine all the ingredients.
  6. Cover the slow cooker and cook on low heat for 4 hours.
  7. After 4 hours, remove the bay leaf.
  8. Taste and adjust the seasoning if needed.
