Ingredients

  • 3 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 1/2 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 1/2 cups mashed ripe bananas
  • 1 (8-ounce) can crushed pineapple, undrained
  • 1 cup chopped pecans
  • Cream Cheese Frosting:
  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans for garnish

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking soda, cinnamon, and salt. Mix well.
  3. Add eggs, oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Stir in mashed bananas, crushed pineapple (with juice), and chopped pecans.
  5. Divide the batter equally between the prepared cake pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  11. Repeat with the remaining layers, stacking them on top of each other and frosting in between.
  12. Frost the top and sides of the cake with the remaining cream cheese frosting.
  13. Garnish with chopped pecans for added crunch and decoration.
  14. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
