Ingredients

  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Fresh basil leaves for garnish

Directions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Cut the spaghetti squash in half lengthwise, scoop out the seeds, and place cut side down on the baking sheet. Roast in the oven for 40-45 minutes, or until tender.
