Ingredients

  • 3 cups low-fat graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1 cup low-fat cottage cheese
  • 2 cups reduced-fat cream cheese
  • 1 cup Greek yogurt
  • 3/4 cup granulated sugar substitute
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh berries (optional, for garnish)

Directions

  1. Preheat the oven to 325°F (165°C) and lightly grease a 9-inch springform pan.
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a blender or food processor, blend the cottage cheese until smooth. Add in the cream cheese, Greek yogurt, and sugar substitute. Blend until well combined.
  4. Add the eggs one at a time, blending well after each addition. Mix in the vanilla extract, flour, and lemon juice.
  5. Pour the cheesecake filling over the crust in the springform pan, spreading it evenly.
  6. Bake in the preheated oven for 45-50 minutes until the edges are set but the center is still slightly jiggly.
  7. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour to cool gradually.
  8. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours, or overnight, to set.
  9. Once chilled and set, remove the cheesecake from the springform pan and place it on a serving plate.
  10. Garnish with fresh berries, if desired, before serving.
  11. Slice and enjoy this guilt-free Good-for-You Cheesecake!
